We should turn the default plugin _options structure in a dict of classes that can return data in a more structured way.

We need to be able to add selections for example so that checkbox can be used to enable / disable options and we need to be able to provide a pointer to a function to call when those selections change so that features can be dynamically enabled/disabled in the providers.

This issue ticket was originally removed from the tracker as it clashed with the pull request.
